Looking to kickstart your career in the kitchen or bring your culinary skills into a friendly team? Read on to hear from our senior Chef de Partie, Charlie Bowen about life and work at Moness.
What attracted you to a culinary career?
When I was 15, I managed to secure a cookery course placement at Moray College UHI in Elgin. The course went alongside my school studies but as school finished, my culinary career progressed by taking on a kitchen post in a local hotel. I kept studying in college until I was 22 years old before heading off to Massachusetts for an amazing year long culinary opportunity.
Tell us what it's like to work at Moness?
Well, no day is the same and it comes with plenty of challenges. I enjoy the challenges though and put 110% effort into my job.
When you were a kid, what did you want to be when you grew up?
Growing up my dream was to be a private chef on a super yacht!
What's your favourite dish on the menu?
It has to be our take on the Scottish classic, Chicken Balmoral.
What's your biggest food inspiration?
My biggest inspiration into the world food has to be my grandmother because when she was working in a Oxfordshire Care home she got to a level that she was awarded a personal Michelin star for her hard work, dedication and eye for detail.
What do you do outside of work that makes the most of the area we live in?
My hobbies include Skiff Rowing and paddle boarding and I can enjoy both on Loch Tay, less than 15 minutes away from Moness.
Where do you always recommend to others to explore in the local area?
Scotland is crammed with things to see and do but I recommend exploring the Cairngorms, Aviemore and Loch Morlich which are only an hour away from Moness (and it’s on route to where I grew up further North).
